Blueberry Mint Ice Cream Popsicles & Thank You




We had so much fun with the Fruit Yogurt Popsicles we made for Canada Day, that my youngest decided to make his own batch.  He gently broke it to me that if we used a little bit of cream - ice cream - we might end up with something more like a popsicle and less like hard, frozen fruit (ouch!).  Turns out, the little sneak's version is pretty fantastic.  So, with his permission, I am reproducing it here.

 Blueberry Mint Ice Cream Popsicles
  • 1 cup natural vanilla ice cream
  • 1/2 cup plain yogurt
  • 1/2 cup frozen blueberries
  • About 8 mint leaves, chopped
  • 1 tsp pure vanilla extract
  • 1 tsp honey
  • 4 popsicle moulds (that hold 1/2 cup of mixture each so you can adjust according to the size of your moulds)

Place all ingredients in a blender and blend until smooth.  Fill 4 popsicle moulds with mixture and place in freezer for 4-6 hours.

  5. Hi Kelly! Thanks for your last comment, it's so nice to hear someone appreciates my blog! As for the wholemeal flour in the muffins, I think it's wheat flour, but I sometimes use spelt flour and I reckon that would taste just as good if not better. I'd never thought of putting blueberry and mint together but am tempted now - mint goes well with practically everything!

  7. Why is frozen yoghurt SO GOOD?! I'm not really sure but it's easily on a par with regular ice-cream. I don't have any popsicle forms, but as soon as my freezer is more empty after this weekend (got a lot of stocks in for a small party) I might have to source some blueberries of my own and whip up a batch in a tub!
