Blueberry Mint Ice Cream Popsicles
- 1 cup natural vanilla ice cream
- 1/2 cup plain yogurt
- 1/2 cup frozen blueberries
- About 8 mint leaves, chopped
- 1 tsp pure vanilla extract
- 1 tsp honey
- 4 popsicle moulds (that hold 1/2 cup of mixture each so you can adjust according to the size of your moulds)

Place all ingredients in a blender and blend until smooth. Fill 4 popsicle moulds with mixture and place in freezer for 4-6 hours.

As for the wholemeal flour in the muffins, I think it's wheat flour, but I sometimes use spelt flour and I reckon that would taste just as good if not better. I'd never thought of putting blueberry and mint together but am tempted now - mint goes well with practically everything!

ReplyDeleteWhy is frozen yoghurt SO GOOD?! I'm not really sure but it's easily on a par with regular ice-cream. I don't have any popsicle forms, but as soon as my freezer is more empty after this weekend (got a lot of stocks in for a small party) I might have to source some blueberries of my own and whip up a batch in a tub!

ReplyDeleteI can't wait to try your son's blueberry mint popsicle recipe. I never tried mint with blueberries, I've used in in other fruits but not bluerries. Sounds like your son is a foodie at heart! :) Oh, great photo too!
A very cute idea to assemble these with children..... I'm sure it was great fun and the popsicles look healthy and have a brilliant color!
