Raspberry Beetroot Latte

A beautifully vibrant, delicious and immune supportive beetroot latte to chase away the winter blues.

Ingredients
  • 1 medium fresh red beet (about 6oz/180g)
  • ¾ cup fresh raspberries (about 3oz/90g)
  • 1 Tbsp grated ginger, or to taste
  • 1 tsp maple syrup or honey
  • ½ tsp (ish) cinnamon
  • 1 + ½ cups almond milk (I like Califia unsweetened)
  • At least 1 cup reserved beet water (from boiling)
Instructions
  1. Trim ends off beet, slice in half and boil, skin on, in submerged water for about 20 minutes or until the beet is relatively tender when pricked with a fork. Tip: I usually boil 3 beets at a time and store in fridge for later use.
  2. Once beet is cooked, drain and reserve water (set aside). Allow the beet to cool sufficiently to handle and remove skin (I do this mostly with my fingers).
  3. In a blender or food processor, combine: cooked beet, raspberries, grated ginger, maple syrup or honey, cinnamon and 1 cup of reserved beetroot water (the water should still be warm or just reheat before adding).
  4. Blend until nice and smooth. Taste and adjust flavor as desired. The mixture will look like raspberry jam only more dilute. You can add more water to achieve an even more dilute consistency as preferred.
  5. Meanwhile, bring milk to a simmer in a small pot on stove (avoiding an active boil) and then carefully transfer milk to a frother and froth.
  6. Divide beetroot mixture between 2 cups leaving enough room for added milk/froth.
  7. Simply top with foam or mix in some of the hot milk first with a spoon (will create a pretty pink color) and then top with foam -- using as much or as little as you like in both cases.
  8. You can sprinkle foam topping with additional cinnamon or nutmeg/cardamom, etc. as desired.
  9. Enjoy.
Notes
The Berries: you can use frozen berries here but I suggest defrosting and warming (to avoid an iced latte).
The Milk: you can use any milk beverage you choose however, some of them froth better than others. You can refer to this post for more information.
The Frother: my favorite is referenced in the post above.
Fiber! this latte is fiber rich which is groovy but go easy at first to acclimatize and ease possible gastric distress.
